Homemade pizzas!

   🍕 This recipe was given to me by one of my best friends Mariana Di Nunno😊 Ingredients 10g fresh yeast o 1/2 sachet dry yeast (see packet instructions) white flour 300g, ideally from bakery (or you can use all purpose white flour) Olive oil (virgin extra would be better)  sugar salt black pepper 1/4 tin tomato sauce  dry herbs - basil, oregano, parsley, thyme dry garlic 100g Ricotta 1 Mozzarella ball a few mushrooms 1\4 courgette(I've used a white courgette but any would do) Water This recipe makes 2 pizzas Important How to make lukewarm water - mix 150ml boiled water with 300ml cold water, and use 150ml of this volume to dissolve the yeast in. Sri Lankan chicken curry - Geeta style

  🌴 This is the most popular meat dish in Sri Lanka, I hope you enjoy it! Ingredients 1.5kg chicken (with bones) 1/2 large onion 3-4 garlic cloves tiny bit of fresh ginger (or a sprinkle of ginger powder) 200ml coconut milk  sunflower oil (you can use olive oil) 1/2 tomato 1 - 1/2 fresh green chilli a few curry leaves (can be substituted with bay leaves) 4-5 cardamom pods 1 tablespoon tomato puree (optional) 3-4 teaspoons curry powder (A roasted form of curry powder is also used in Sri Lanka for meats) Boiled water 1/4 teaspoon red chilli powder (add more for more hotness!) 1/4 - 1/2 teaspoon turmeric powder 1-1/2 teaspoon paprika (NOT sweet or smoked) 1 cinnamon stick (optional) 4-5 cloves (optional) Malt Vinegar (or a neutral vinegar) Important Spice powders - please use curry powders from an Indian store E.g. Vegetarian samosa pastry

🌷These are normally cooked as either deep-fried or oven baked pastries (I will add a recipe for this in the near future). It is probably the most famous Indian snack and I've found a quick way to prepare it without making pastry dough. There are several different fillings, but this is my favourite one. Ingredients 2 large potatoes (1kg approx.) 4-5 carrots half a small glass of peas 1/2 large onion A few fresh coriander leaves 1 - 1/2 fresh green chili (optional, if you prefer hotter) 1 teaspoon cumin powder 1 teaspoon coriander powder 1/4 teaspoon red chilli powder (add more if you prefer hotter!) 1/4 teaspoon turmeric powder  lemon juice pastry sheets (2), pre-cooked 1 egg (depends on the pastry brand) oil (sunflower oil is used normally, but you can use olive oil) 1.Wash and peel the potatoes and carrots. (Spanish!) Russian Salad

  This recipe demonstrates how to make your own  mayonnaise, but  you can always use ready made versions, especially over the summer months (fresh mayonnaise goes bad very quickly in hot weather).  Despite having Russian roots, it is actually a very popular dish in Spain! Ingredients 3 eggs 100 ml Olive Oil  (I use Spanish extra virgin, but other types should be fine) 100ml sunflower oil 2 large potatoes 5 carrots(4.5 to be boiled, half to grate) 2 handfuls of peas (approx.) 2 handfuls of green olives (approx.) 1/2 teaspoon lemon juice, some lemon zest 1 tinned tuna, or 2 small tins (conserved in olive oil would be better) 1 canned red peppers (optional) 1.
