My first cheesecake

  This was my first time attempting a cheesecake with a buscuit base. I have to say it came out much better than I expected and my family members loved it! Next time I'm going to try and make my own raspberry jam to go on top. I wanted to try and make an original American style cheesecake, but I couldn't find sour cream in my town!  I've seen it now and then at one supermarket, but this time it just wasn't there when I needed it! So I've substituted with a full fat natural yogurt.  You could also try  crème fraîche. I've used strawberry jam as my topping, but you could also try canned berries (couldn't find those in Spain either!) or simply whipping cream and berries. Ham and mushroom croquettes

  If you know me you'll know that this is one of my favourite tapas dishes. I've combined the jamón (Spanish ham) and mushrooms. But you can use just jamón, or mushrooms, or experiment with other fillings of your choice such as spinach, chicken, fish or cheese or seasoning with some parsley.  It is best to make the filling the day before and let it cool overnight which I find helps with splitting up the cooking time. Ingredients 300 g  mushrooms 180g  spanish ham (jamón) 1 large onion 400ml milk 70 g flour 1 teaspoon nutmeg breadcrumbs 2 eggs olive oil for cooking and deep frying butter (optional) salt parsley- optional - for garnishing Milk and flour quantities are approximations, you might need a bit more or less. Salmon curry with coconut milk

 🐠 This is a typical style of cooking a Sri Lankan salmon or tuna curry. In Sri Lanka, they tend to use a roasted curry powder version, but it still works fine with normal curry powder, which is what I'm going to use.  Ingredients   salmon - 4 pieces (450-500g approx.)  1/2 large onion  3-4 garlic cloves  1/2 tomato  1 green chili (or less, depends on preference)  a few curry leaves (or bay leaf)  coconut milk (3/4 of a 400ml tin is sufficient, but you can use the whole tin if you prefer more sauce!)  1 large tablespoon curry powder  red chili powder - I only add 1/4 teaspoon, but you can add more or less! 1/4 teaspoon turmeric powder sunflower oil (or olive oil) salt, pepper a bit of fresh ginger (optional)  If you live in the US or UK, try to buy the spices in an Asian shop if possible, as it will make the flavours more authentic. Grilled Vegetables and chicken with Tzatziki dip

 🥗 You can combine this dish with potatoes, rice or any sort of wrap. Vegans and vegetarians could try with tofu instead of chicken. Also, if you don't like peppers, try with tomatoes or courgettes! The dip is versatile and widely used to accompany various dishes. I know it is eaten all around the Mediterranean and Middle East, but I've made it the Greek way. Ingredients 700g approx. chicken breast 1 large red onion 1 - 2 green peppers 1-2 red peppers salt, pepper olive oil dry herbs of your choice - parsley, basil, oregano, thyme Tzatziki dip 1 - 1.5 large cucumbers 2 plain Greek yogurts (125g x 2) 1 tsp white wine vinegar extra virgin olive oil 1/3 clove of garlic 2-3 tsp lemon juice salt dry dill (or fresh if you can source) You will need 8-10 skewers. Spanish lemon and yogurt cake

🎂The concept of making baked goods with olive oil instead of butter is still quite new to me! But having lived in Spain for a few years now I realise that most Mediterranean cakes and  muffins are made this way. It is best to try and use a high quality extra virgin olive oil if you can, as nutrients such as vitamin E and its antioxidant properties will still remain intact. You can use a milder olive oil if you prefer a more subtle  taste.  Use the yogurt cup to measure the rest of the ingredients. E.g. 3 cups of flours - 3 cups using the yogurt cup. If you can't find a lemon flavoured yogurt you can substitute with a plain yogurt which also works fine. I'm using a 23cm wide baking tin. Try to use a baking specific flour brand if possible. Thai green curry

       The green curry is my favourite of all the Thai dishes. I really wanted to make it 100% from scratch, but unfortunately due to covid restrictions, delivery delays and changes I couldn't pick up Thai basil from Malaga central market. So I'm going to share instructions on both how you could make it from scratch if you are able to source all ingredients, or how to utilise bottled or pastes for maximum flavour. On this occasion I'm going to make it with chicken, but you can make it with other meats or vegetables, or  mixed. You can try various combinations such as chicken, aubergines and peas, or peppers and bamboo shoots.
